Yummy Red Plum and Onion
A Conserve is usually a jam made of fruit stewed in sugar. LuLu Red Plum and Onion Conserve is a lively combination of sweet plums and red onions slowly cooked with brandy, brown sugar, herbs and spices. Due to its sweet and savoriness, there are many various methods of using this conserve. The easiest way is to use the conserve straight out of the jar.
Try it as a barbecue sauce for grilling or as a piquant accompaniment on pork or steak. Salmon may not come to mind with this conserve but it is a great pairing of flavors. Slather the conserve on sandwiches, burgers, and sausages and taste the flavor it adds. Creating vinaigrette with this conserve is also very simple; just add olive oil and perhaps a small amount of vinegar. Another suggestion for this would be a flavorful sauce for poultry. Harissa
Harissa is a chili pepper paste commonly found in North African cooking, mainly Moroccan, Algerian, and Tunisian cuisine. In those regions, it is a kitchen staple used on a daily basis. However, the recipe for Harissa varies from region to region.
LuLu’s Harissa bursts with peppery flavor and is made with fire-roasted tomatoes, red peppers, spices and herbs.
Harissa is so versatile that it can be used to enhance soups, stews, appetizers and main dishes. Marinate meat and seafood with it before grilling. Rub Harissa onto poultry before baking to give it a spicy kick as it cooks. Mix harissa into scramble eggs for extra zing. Blend it into aioli and mustards for creative spreads to brighten up burgers and sandwiches. The possibilities are endless because harissa works so well with vegetables, meats, and seafood. Grilled Chicken Skewers with LuLu Sweet & Spicy Tomato Grilling
Bamboo skewers
4 boneless, skinless chicken breast halves
½ cup LuLu Sweet & Spicy Tomato Grilling Glaze
LuLu Mustard with Harissa
Soak bamboo skewers in water for an hour before preparing recipe. (This will prevent them from burning during grilling.)
Heat grill or pre-heat broiler.
Rinse chicken breasts and pat dry. Cut chicken into 1/2-inch pieces.
Thread 2-3 pieces of chicken onto each skewer. Brush LuLu Sweet & Spicy Tomato Grilling Glaze over chicken and grill (or broil) for about 2 minutes on each side until cooked through.
Serve chicken on skewers with LuLu Mustard with Harissa on the side as a dipping sauce.
Makes 8 appetizer servings.
NOTE: To adjust recipe into entrée portions, cut chicken into 1-inch pieces and cook a minute or two longer on each side. Serve over Rice Pilaf. Recipe yields 4 entrée servings. *Harrisa is chapped garlic, chiles, cumin, and caraway in a base of olive oil—that is used to flavor traditional North African soups, stews, and couscous. LuLu adapted the concept, creating peppery mustard that’s rusty red from fire-roasted tomatoes, red peppers, beets, and carrots, plus the classic harissa spices.
