Lactobacillus

A genus of bacteria commonly found in fermented foods like yogurt, sauerkraut, and cottage cheese is crucial for the digestion of numerous types of foods and nutrients, including lactose. The bacteria also help the body produce lactic acid, which aids the immune system and keeps out unwanted bacteria from the digestive system.

Bifidobacterium

Another genus of bacteria found in dairy products, Bifidobacterium bacteria, lives in the intestines and plays an important role in the digestion of complex carbohydrates, like the ones found in whole wheat bread, brown rice, quinoa, and oatmeal. A high level of Bifidobacterium is also beneficial to the immune system in combating harmful bacteria that may enter the body through food.
